A brief history of La Chaîne des Rôtisseurs 

What is La Chaîne des Rôtisseurs? 

La Chaîne is the oldest Gourmet Food and Wine Society in the world. 

It is based on the traditions and practices of the old French Royal Guild of Goose Roasters in 12th Century Paris. 

King Louis IX, assigned the Provost of Paris with the task of developing young culinary apprentices and improving their technical knowledge. 

Over the years, the traditions continued. The activities and privileges were extended to preparing and selling all kinds of meat…including poultry and venison.  

For over four centuries the brotherhood of the Roasters cultivated and developed culinary art and high standards of professionalism and quality…standards befitting the splendor of The “Royal Table”—until the guild system was disbanded, together with all the others, in 1793 during the French Revolution. 

Since its rebirth over 50 years ago, La Chaîne has grown dramatically, spreading its influence and presence worldwide. 

This association of people dedicated to fine cuisine, now denotes itself to promoting and developing the gastronomic values while at the same time widening its focus to “Table Art”. 

Professional Chefs, Hotel and Restaurant owners, as well as non-professional members who share in the “spirit” of the society and appreciate fine dining and good fellowship. 

It offers opportunities to demonstrate their exceptional skills and creativity to an appreciative audience…knowing from a competitive viewpoint…the cream will always rise to the top....

Today’s Chaîne des Rôtisseurs

Today, The Chaîne Foundation maintains its dedication in support of young culinarians all over the world through scholarships and their pursuit of excellence within the culinary arts.

The purpose of The Chaîne des Rôtisseurs is: 

To promote, celebrate and encourage, the unique expanses of culinary art and fine wine in all parts of the world.

Membership offers travel benefits (both home and abroad) and provide extensive opportunities to be welcomed like family! 

Members can cultivate richly rewarding lifelong friendships, locally, regionally and internationally.

Le Bailliage du Vermont

 

We as Vermonters, see our own unique chapter emerging.  

The Vermont Baillaige (chapter) will reflect its own distinctive styles and attitudes that celebrate the flavors, culture and traditions of our beautiful state of Vermont. 

Not only do we see the pleasures of the table …but we see numerous opportunities to educate, reach back into our pages in history, and reach out to our neighbors craving a taste of “The Vermont Experience”. 

La Chaîne's Bailliage du Vermont’s mission is to present limitless possibilities to our members…and mostly to celebrate who we are.
