An Italian Picnic, Westchester NY Chaine Style

Confreres and Friends,

Ferragosto is one of the three most important holidays in Italy, the others being Christmas and Easter. Practically all of Italy vacations and picnics from August 15th to the end of the month. They gather at beaches, backyards, resorts and restaurants, in remembrance of a holy feast, to enjoy the company of friends and family.

The well-known Italian Chef/Proprietor Angelo Liberatore has created a six course menu that will be served in his restaurant-garden pergola along the Hudson River.

Sunset on the Hudson is just a few yards away. It will be like picnicking on the Tiber in Rome, the Arno in Florence or the banks of Lago di Garda or Lago di Como – but only “Chaine Style” on the Hudson.

At 6:00 we will be seated and served Ca del Bosco a Franciacorta from Lombardia, one of the most revered sparkling wines of Italy, made in the French Champagne Tradition. Or, if preferred, you can savor a still wine from the Tuscan town of San Gimignano (called the Manhattan of Italy).

This wine is called Vernaccia di San Gimignano and it was the first white wine awarded the DOCG designation for premium Italian wines. Our first course will be a tantalizer of Parmigiano Reggiano and select Italian olives to stimulate our appetites.

Tuscan Panzanella is the Second CourseThis is made with an interesting combination of nectarines, and of course, the pride of this salad – garden tomatoes, along with red onions and basil caressing the cubes of crusted Italian bread, all anointed with Angelo’s explosive Italian Dressing.

The Third Course: Ricotta Gnocchi with Fresh Corn and Cilantro in a Parmigiano Butter Sauce.  This dish will be served with Produttori Barbaresco 2015 from Piedmonte.

The Fourth Course is Carciofi alla Giudia, this is a crispy Jewish artichoke made with Arugala Pesto, Taggiasco Olives and Parmigiano Reggiano, no wine is suggested.

The Fifth and Main Course “LAMBCHETTA”,roasted with rosemary, fennel seed and a basting of Dijon. This is a Culinary work of art that is labor intensive. It is a saddle of Lamb totally deboned, rolled and roasted like Italian Porchetta. And served in tantalizing slices. A rare occasion and experience for any Chaine member.

We will serve this with a Super Tuscan that was given to us by two of our Westchester NY Chaine Members: Rob Miller and Mike Scarsella. It is Tenuta di Biserno, Biserno, Alta Maremma Toscano 2009, a classic Bordeaux blend.

Westchester NY Chaine Members and one Guest is $200 each. All others are $225 each.
