It is with great enthusiasm that we can confirm our latest Chaine dinner. On Saturday night May 22nd at 6 PM we will enjoy the culinary cuisine and classic atmosphere of the Genesee Valley Club. This will be a Black Tie dinner and promises to be a night to remember. Please remember to wear your medals.
We are limited as to attendees. I would ask that you confirm thru email at your earliest convenience and then send your check.

FIRST COURSE:
Seared Big Eye Tuna Cucumber, Sugar Snap Peas, Radish,
Avocado Wasabi Aioli, Crispy Rice Noodles
SECOND COURSE:
Roasted Duck Ballantine, Carrot Puree, Duck Fat Peruvian
Potato, Romanesco Cauliflower, Port Wine Gastrique
THIRD COURSE:
Spring Asparagus Burratini, Heirloom Tomatoes, Arugula and Basil oil
FOURTH COURSE:
Waygu Strip Loin, English Pea & Truffle Risotto, Heirloom Carrots, Madeira Demi Glace
FIFTH COURSE:
Toasted Coconut Mousse, White Chocolate Cage, Passion Fruit Gelee, Fresh Berry Coulis, Caramelized Pineapple Flower.

The GVC has been doing a superb job since 1885 and I look forward to seeing you at our Spring Fling on Saturday May 22nd. To secure your reservation please send your check for $185 for members and $200 for guests payable to Tom Wahl, 1001 NW 29th Court Wilton Manors FL 33311. Checks should be received by May 8th as I will open it up to guests after that date.
I would be remiss if I did not thank Marti Macinski and Abel Gonazalez for their extraordinary work on our recent dinner at Next Door. The food and wine were superb, thank you to you both for your great pairings.
